Making Bread with the Programme "Schnell" (Quick Baking)
Quick breads are made with baking powder or baking soda that is
activated by moisture and heat. For perfect quick breads, it is suggest-
ed to put the liquid into the bottom of the baking pan, and dry ingredi-
ents on top. During initial mixing of quick bread, dry ingredients may
accumulate in the corner of the pan. It might be necessary to stir the
ingredients to avoid flour clumps.
The bread maker can bake a loaf in a short time with the programme
"Schnell". Please note that you have to use warm water of 43 – 48° C.
Use a cooking thermometer to measure the temperature. The influ-
ence of the correct temperature is essential to the performance of
baking. If the water temperature is too low, the bread will not rise to the
expected size. If the water temperature is too high, yeast-fungi will be
killed before rising, which will also affect the baking performance.

Useful Hints

When operating the bread maker for the first time we recommend not
using the delayed starting.
The confirmation sound which indicates the end of the programme
cannot be switched off. The signal sound will also sound in the night.
After baking process the bread maker torn to the keep warm function.
If not needed, press the button
the keep warm function. Otherwise the bread will be kept warm for one
hour.
Allow the bread to cool down for some minutes before taking out. The
baking pan and bread may be very hot, always handle with care.
Leave the bread to cool down for about 20 minutes before slicing.
Before slicing the loaf, remove the kneading hook hidden on the
bottom of the loaf.
Caution! The kneading hook may be hot. Do not grasp the kneading
hook with bare hands.
If desired you can remove the kneading hook after the last kneading
cycle so that they do not leave holes in the bread after baking. Coat
your hands with flour and lift out the dough. Remove the kneading
hook and re-insert the dough into the baking pan.
