Cream of Courgette Soup

3 courgettes (approx. 600g),
1 medium potato,
1 chicken stock cube,

Quinoa Tabbouleh with Mint

To be prepared the day before it
2 cups of quinoa,
300 g frozen peas,

Peel one of the courgettes and the potato, and cut all the
