CLEANING
The fats present in the ice cream mixtures are ideal fields for the
proliferation of bacterial loads and mould. To eliminate this se-
rious problem, all the parts which come into contact with the
product must be thoroughly washed and sanitized by careful
procedures and using suitable sanitizing products.
The stainless and plastic materials used on our machines, in fact, com-
ply with the strictest international provisions and their special shape
facilitates their washing. However this is not enough to prevent the
formation of mould and bacteria caused by insufficient or incorrect
cleaning. The manufacturer recommends thoroughly washing and
sanitizing the parts in direct contact with the product after each work
shift and in compliance with hygienic standards in force in the Country
where the machine is installed.
Do not wash the machine with high-pressure water jets. Using
water jets for cleaning may cause electrocution for the operator
and damage to the machine.
Never use any type of solvents and/or thinners to preserve the
pla-
stic parts and gaskets during washing.
- Chemical sanitizing products must be used in complian-
ce with standards in force and with the utmost caution.
- During sanitizing operations, do not touch parts with tissues,
sponges, rags or any other material.
It is recommended to use only the sanitizers approved by Frigo-
mat. The use of different sanitizers can compromise the effecti-
veness of the sanitization and the integrity of the components.
The manufacturer shall not be held liable for personal harm and/
or damage to objects deriving from the non-observance of these indi-
cations.
Respect the indicated dilution (2%). Lower dilution percentages
(< 2%) could render sanitization ineffective; higher dilution per-
centages (>2%) are useless for a better sanitization but could
represent a risk to health, to the integrity of the components
and to the environment.
Sanitizing solutions are potentially dangerous substances and
must be handled with care. Do not ingest. If swallowed or if you
feel unwell, seek medical advice immediately (show the sanitizer
label where possible).
Sanitizer in contact with skin and eyes may cause damage; use speci-
fic protection (e.g. disposable gloves, etc.).
If case of contact with skin or eyes, wash immediately with plenty of
fresh water and seek medical advice immediately (show the sanitizer
label where possible).
Never transfer the sanitizing solution into containers other than
the original ones that do not have a safety identification plate.
To correctly clean your machine, refer to the following operations:
1.1 Pre-washing
Press the STOP key.
Lift the cover and, using the scoop, remove
as much of the product as possible from the
jar to be washed.
Pour the maximum admitted load of warm
(~50°C / ~122°F) drinking water into the
machine. Close the cover.
Extract the drain hose and place a container
under it. Remove the safety cap (fig.IV/01).
Push AGITATION/P in
order to start the beater
motor and let it run for
about 1'. (fig.IV/02)

Pull the drain plug towards you to remove
all the washing water (fig.IV/03).
Repeat the procedure until the water comes
out clear and clean.
Press STOP key.
Pour in the freezing cylinder a quantity of detergent / sanitizing solution
equal to the maximum allowed charge.
Press the AGITATION / P key so that the beater motor starts and run for
about 3'; pull the drain plug towards you to extract all the sanitizing solution.
Close the drain plug.
Pour into the freezing cylinder a quantity of cold drinking water equal to the
maximum charge allowed to rinse the surfaces just treated with the sanitizer.
Pull the drain plug towards you to remove all the washing water. Close the
draining tap. Press the STOP key.
1.2 Sanitizing removable parts
Before carrying out the operations described below, disconnect the
power supply of the machine, making sure that it can be restored
only with the consent of the personnel working on the machine.
Some parts have sharp corners and edges. Use extreme caution to
avoid injury and wear disposable protective gloves if necessary.
When disassembling the moving parts, special care must be
taken to avoid shocks and/or falls that could damage them and
compromise the operation of the machine, cause serious injury
and/or property damage.
Some parts are very small; be very careful to avoid losing them
during cleaning operations.
Preparation of washing tub
Wash your hands well and/or wear disposable gloves.
Fill a clean tub with a sufficient amount of
drinking water at approximately 50°C (122°
F) and the sanitizer.
Prepare the supplied brush and the OR
disassembly device and immerse them in
the solution (fig.IV/04).
Remove and cleaning of the cover
Slide the hinge pin out and remove the
cover.
Emerge the previously disassembled com-
ponents into the tub with the sanitizer and
brush the surfaces with care. Pay special
attention to the surfaces in direct contact
with the product (fig.IV/05).
Remove and cleaning of the scoop

Remove the scoop from its housing.
Soak the scoop into the barrel with the sani-
tizer and brush the surfaces with care. Pay
special attention to the surfaces in direct
contact with the product (fig.IV/06).
