y Set the thermostat (optimal temperature 60°C). y Preheat for 15 minutes. y Insert the plates and put the lid back on. If the plates are cold when loaded, it will take 2 hours for them to reach 60°C. y When at maximum temperature, lift the lid by the round handle. Both the lid and the top may be scalding hot. y When serving, you may put the lid on its support (Fig.1- page 2) HOT AIR STEAM CABINETS y Set the enclosure(s) in use to 80°C. -
