SHARPENING BASICS

The PEtec sharpening guides create an
optimal edge on your Wüsthof knives or
any straight edge knife.
SHARPEN STAGE
For best results, complete the full timed
cycle.
1. Using the red belt, insert the heel of
the knife into the left sharpening guide,
keeping it up against the leather lining
and resting on the left rollers.
2. Using light pressure, slowly pull your
knife blade through the sharpening
guide (8" knife = 8 seconds).
3. Repeat on the right guide. Continue
alternating sides until machine shuts off
and the lights turn off.
Test for sharpness (we recommend slicing
a tomato or bell pepper).
Use SHAPE STAGE for very dull knives.
Use REFINE STAGE for weekly touch-ups.
TIP: Holding down the Shape Stage for 3 seconds will begin an untimed cycle.
TIP: Lights will flash to indicate completion of cycle.
ADDITIONAL BELTS
Using these finer abrasives, on the SHAPE STAGE after normal sharpening,
will further refine your edge.

Keep the knife resting against
the leather lining and on rollers
as you pull through slowly.
