Preparation
1. Separate the eggs.
2. Beat the egg whites until stiff and put in
a cool place.
3. Cream 75 g of the butter and 100 g of
the sugar.
4. Gradually stir in the egg yolks and
buttermilk.
5. Mix flour and baking powder and add
to the mixture gradually.
6. Fold in the stiffly-beaten egg whites and
leave batter to stand for approx.
30 minutes.
7. Meanwhile, melt the remaining sugar,
lime juice and remaining butter and
allow to caramelize slightly.
8. Deglaze with the cream and allow to
simmer for about 3 minutes.
9. Add lime zest and keep warm.
10.Cook waffles (see "6. Make waffles" on
page 8).
11. Serve with the sauce.

8.2 Standard waffles
Ingredients

• 1 sachet vanilla sugar
• 1/2 sachet baking powder
• 250 g sugar
• 200 g butter or margarine
• 500 g plain flour
• 300 ml milk
• 125 ml carbonated mineral water

mineral water.
5. Mix flour and baking powder and add
to the mixture gradually.
6. Stir in vanilla sugar.
7. Fold in the stiffly-beaten egg whites and
leave batter to stand for approx.
30 minutes.
8. Cook waffles (see "6. Make waffles" on
page 8).
9. Disposal
