SHARPX EDGE FIX is a manual knife sharpener with elastic, revolving diamond and ceramic
sharpening and polishing pins which adjust themselves to the knife.
Diamond coated sharpening pins for sharpening blunt knife edges into the correct form, and ceramic
honing pins, maintaining, honing/polishing the knife edge into an optimally sharp shape.
How to Use
Place the knife sharpener on a stable and level surface.
If the knife is extremely blunt, use the Diamond Grinding unit to shape sharpen the knife edge.
Then use the Ceramic Polishing unit to hone/polish the knife edge into an optimally sharp shape.
Note that diamond grinding should only be used when sharpness cannot be obtained by
honing/polishing with the Ceramic Polishing unit.
In order to maintain continuous sharpness, only use ceramic polishing when sharpening your knife.
Adjusting the Sharpening Angle
At the tip of the knife sharpener there is a lever for adjusting the sharpening angle.
30° angle: The angle gives the knife a very thin and sharp edge.
Use this angle if:
- the knife is used for slicing, cutting and chopping softer food products such as salmon, ham and
tomatoes.
40° angle: This angle gives the knife a more durable, sharp edge.
Use the angle if:
- the knife is used for cutting harder food products such as nuts, meat, fish or chicken with gristle
and bones.
Diamond Grinding
The knife must be clean.
Hold the handle of the knife sharpener firmly.
For best result, wet the knife blade with water.
Insert the knife horizontally between the diamond pins with the tip of the knife first. Then press the
knife forwards and downwards with small cutting/sawing movements (about 45° angle and 2-4 cm at
a time – see illustration) throughout the whole length of the blade until the whole knife edge has
passed between the pins.
Repeat the same procedure 3-6 times and check the sharpness.
Repeat until the desired sharpness has been obtained.
Finish by pulling the whole knife edge horizontally back and forth 2-4 times.
Avoid pressing the knife to the bottom of the knife sharpener. (Risk of small scratches on the
blade sides.) Avoid bending the knife in any direction so that the blade touches the protective
cover.
Dry the knife blade after sharpening. Always polish the edge in the ceramic polishing unit
