Maintenance

Only authorised personnel can perform checks and maintenance;
The power circuit must absolutely be interrupted to access the connection devices;
Periodically check the operating temperature;
An annual check of the cabinet is recommended with special attention to window closing, the
electric and water system.
Periodical cleaning
Before starting any cleaning operation, disconnect power to the counter and wait for the surfac-
es to cool off.
Always wear protective gloves.
It is strictly forbidden to use water jets to clean the counter.
Do not use alkaline-based detergents (bleach or ammonia) unless rinsed quickly, abundantly
and carefully. Do not use acid-based detergents (muriatic acid/hydrogen chloride) directly or
contained in common detergents as even the vapours alone can have an oxidising or corrosive
effect on stainless steel.
In detail:
BAIN MARIE
Rust stains on the stainless steel surface caused by the presence of ferrous residue brought by wa-
ter or food can be eliminated with shampoo or neutral detergents using a sponge or rag and rinsing
thoroughly. If the stains persist because the residue has remained for a long time, you may inter-
vene with sandpaper or stainless steel brushes, though risking to scratch the surface.
HOT PLATE
The stainless steel part of the plate must be cleaned with a cloth soaked in soap and water (do not
use aggressive products), then rinsed moderately and dried carefully.
Do not use scouring pads, scrapers or steel brushes as they would ruin the surface.
The glass part of the plate must be cleaned with a moist cloth and dishwasher liquid to be able to
use it daily, when still lukewarm, making sure the food residue does not dry.
Do not use brushes or scrapers to eliminate food residue to avoid damaging the part.
