Cut the fennel into four pieces, add butter,
salt and potatoes if required and place in a
Pyrex face up. Cover the dish.
Slice the courgettes, place in a Pyrex
dish and add butter and salt.
Cut the potatoes into equal parts and place
in a Pyrex dish. Season with salt, origano
and rosemary. Cook in oil.
Slice the carrots, place in a Pyrex dish and cook.

Lay the bread on the grill tray. When one side
of the bread has been toasted, turn over and
toast the other side. Remember: keep the
toast warm at the bottom of the oven until
you are ready to serve it.
